Greek Grilled Chicken & Salad with Lemon Vinaigrette

“Personally, one of my favorite dishes to whip up in a short space of time. It’s light, full of contrasting flavors and crunch, as well as a very subtle kick from the spices in the chicken. Perfect for a quick and easy lunch or dinner!”

Serves 2-3

INGREDIENTS:

For the Chicken:

2 large boneless chicken breasts

1 tbsp freshly squeezed lemon juice

2 tbsp olive oil

2 – 3 cloves of garlic

3 tbsp freshly chopped parsley

1 tsp cayenne pepper

1 tsp dried chili flakes

Salt & pepper to taste

For the Salad & Vinaigrette:

4 cups chopped purple cabbage

1/2 large carrot, grated

1 cucumber, sliced thinly

1/2 tsp grated lemon zest

1 tbsp freshly squeezed lemon juice

1 tsp Dijon mustard

1 tsp sugar

2 tsp white wine vinegar

Salt & pepper to taste

METHOD:

Step One:

In a blender, combine the ingredients to create a marinade for the chicken breasts. Add the olive oil, salt, black pepper, lemon juice, parsley, garlic, chili flakes and cayenne pepper and blend until you have a smooth consistency. Pour over your chicken breasts and let it marinate in a bowl for 15 to 20 minutes while the salad and vinaigrette is being prepared.

Step Two:

In another small bowl, combine the lemon zest, lemon juice, Dijon mustard, white wine vinegar, sugar, as well as salt and pepper and mix until properly combined. Stir into a bowl with the combined ingredients for the salad and toss for a couple of minutes until evenly coated. Set aside.

Step Three:

On a skillet or grill pan over medium heat, grill the chicken breasts for 6 – 7 minutes per side or until its cooked through. If using a cooking thermometer, ensure that the thickest part of the meat is no less than 165° Fahrenheit or 75° Celsius. Let the chicken rest for 5 – 7 minutes before slicing it into 1/2 inch to 3/4 inch thickness. Serve on a bed of the prepared salad.
