Chickpea Salad

“A quick and easy lunch or dinner recipe, packed full of flavour and protein in one sitting, and the best part is that it only requires a handful of basic ingredients!”

Serves 2

INGREDIENTS:

1 tin of chickpea/channa

2 medium sized tomatoes, deseeded and diced

1 large cucumber, deseeded and diced

1 medium sized red onion, finely diced

1 handful chopped fresh parsley

1/2 cup of celery

2 tbsp olive oil

1/4 tbsp sesame seed oil

2 – 3 tbsp lemon juice

Pinch of cayenne pepper

Pinch of roasted cumin/geera

Salt & pepper to taste

METHOD:

Step One:

Add all of the ingredients into one large bowl and gently toss to combine. Set aside in refrigerator for a minimum of one hour to allow flavours to properly marinade. (I suggest adding crumbled feta cheese if you wanna go the extra mile, but other than that, it’s completely optional)
